Heavy/bulky postage payments

Why do customers sometimes not pay the postage when it has been entered in the description instead of the box because it exceeds the postage for that catergory? All is fine if I send invoice but some pay before I get a chance and then I have to email them for more money which I don't like doing. What can I do, as it seems obvious that the customer either doesn't see the postage or doesn't know how to add it on when they pay, to try to stop it happening as I've had quite a few instances lately?
